Pear & cardamom thai tea

In medieval times, cardamom was thought to help protect against the cold. Today, when the weather turns cold, people go to Thailand. This drink caters to both times.

| 20 ml | pear & cardamom syrup

| 40 ml | pear juice |
| 40 ml | thai tea concentrate |

| 500 ml | hot water |
| 200 g | ice |

- Something to store the tea concentrate in
To-Do List
For the Thai tea concentrate:
- Brew the tea in hot water for 8 min
- Strain out the leaves
- Dilute with ice
- Store in the fridge until ready to use
For the drink:
- To make the syrup, toast cardamom pods and then lightly crush
- Add crushed pods to a pan with pear juice and sugar
- Bring to a simmer and cook until reduced by half
- Leave to cool for 1–2 hours to let the cardamom infuse further
- Strain out cardamom pods and store the syrup chilled
- To build the drink, fill a glass with ice
- Add syrup and pear juice
- Stir
- Top with Oatly Barista Edition
- Finish with thai tea concentrate
