All You Need

60 mlagave cold foam
10 gcherry blossom syrupimpossible to find?*
150 gcold brew or chilled filter coffee
Ice
A sprinkle of sansho pepper
*make your own by mixing cherry syrup with jasmine or elderflower.
Cold foam

15-30 gsyrup of choice (maple/vanilla)

  • Whipped cream siphon

Cold foam

  1. Add all ingredient to a whipped cream siphon.
  2. Dispense gas cannister into the siphon and shake.
  3. Dispense gently onto your drinks.
Who has a whipped cream siphon at home? I use an electric milk whisk in a tall container to make the creamy oats fluffy and silky before pouring it over the Snowcap.

Making the drink

  1. Add the cherry blossom syrup to a glass with ice.
  2. Pour over the cold brew.
  3. Gently dispense the cold foam over the cold brew to float on top.
  4. Finish with a sprinkle of sansho.
The name of this sancho-peppered cherry blossom beverage is a reference to the tiny but beautiful hummingbird, sipping nectar from small flowers, who named itself after the large snow-covered tops of the mountains known from children's drawings all over the world that are called snowcaps because their parents thought the drawings looked like this drink. Mind blowing.
