Matcha cold foam

| 0,2-0,4 fl oz | agave syrup (optional)to taste |
| 0,004 oz | salt(small pinch) |
| 1 fl oz | cold water |

- Whipped cream syphon and chargers
- Saucepan and stovetop
- Cocktail shaker

To-Do List
For the cold brewed matcha (1 portion):
- Sieve the matcha into a bowl or cocktail shaker
- Add all other ingredients
- Whisk or shake vigorously for 30 sec
For the cold brewed matcha (multiple portions):
- Add all ingredients to a blender
- Blend on low speed for approx 20–30 sec until no matcha lumps are left
- Chill immediately
For the mochi balls:
- Whisk all mochi ball ingredients together until smooth
- Add to a pan and heat, stirring until the mixture comes together and forms a sticky dough (prepare for an arm workout)
- Pour into a container and chill
- Dust a flat surface with extra rice flour
- Cut small pieces of the mochi mixture, rolling in the rice flour to keep them from sticking together
For the cold foam:
- Blend matcha cold foam ingredients together, then add to a whipped cream siphon
- Dispense gas into siphon, shake and set aside
For the drink:
- Add 1 1/2 oz of mochi balls to a glass
- Top with ice, Oatly Barista Edition and cold brewed matcha
- Finish the drink with cold foam
