All You Need

1 1/2 ozcold brewed matcha
Mochi balls
Matcha cold foam
Cold brewed matcha (ingredients per portion):

0,1 ozmatcha powder
0,2-0,4 fl ozagave syrup (optional)to taste
0,004 ozsalt(small pinch)
1 fl ozcold water

Tools

  • Glass
  • Blender
  • Whipped cream syphon and chargers
  • Saucepan and stovetop
  • Cocktail shaker
  • Whisk + bowl
    • or Blender

To-Do List

For the cold brewed matcha (1 portion):

  1. Sieve the matcha into a bowl or cocktail shaker​
  2. Add all other ingredients​
  3. Whisk or shake vigorously for 30 sec​

For the cold brewed matcha (multiple portions):

  1. Add all ingredients to a blender
  2. Blend on low speed for approx 20–30 sec until no matcha lumps are left
  3. Chill immediately

For the mochi balls:

  1. Whisk all mochi ball ingredients together until smooth
  2. Add to a pan and heat, stirring until the mixture comes together and forms a sticky dough (prepare for an arm workout)
  3. Pour into a container and chill
  4. Dust a flat surface with extra rice flour
  5. Cut small pieces of the mochi mixture, rolling in the rice flour to keep them from sticking together

For the cold foam:

  1. Blend matcha cold foam ingredients together, then add to a whipped cream siphon
  2. Dispense gas into siphon, shake and set aside

For the drink:

  1. Add 1 1/2 oz of mochi balls to a glass
  2. Top with ice, Oatly Barista Edition and cold brewed matcha
  3. Finish the drink with cold foam
