All You Need

5,6 fl ozOatly Half & Half
10 fl ozsoda water
1,6 fl ozalmond syrup
1/4 tspxanthan gum
Strawberry shrub
  • 10 oz strawberries
  • 10 oz sugar
  • 8 fl oz white wine vinegar​
Ice

Tools

  • Whipped cream syphon and chargers
  • Bowl
  • Glass
  • Jar
  • Strainer
  • Knife
  • Chopping board

To-Do List

For the strawberry shrub

  1. Chop the strawberries into quarters
  2. Add to a sterilized jar with the sugar
  3. Leave in the fridge for 24–48 hrs, stir​ occasionally to dissolve the sugar
  4. Strain out solids
  5. Stir in vinegar and store in the fridge

For the drink

  1. Mix Oatly Half & Half, almond syrup and xanthan gum together, then add to a whipped cream syphon
  2. Dispense gas into syphon, shake and set aside until step no. 6
  3. Fill glass with ice​
  4. Add 1 fl oz strawberry shrub
  5. Top with sparkling water​
  6. Finish with almond cold foam​
